Is ICF really worth it? I've talked with a few contractors about it and they say everyone who went with it says they could never go back to a stick framed home afterwards, the soundproofing, energy efficiency and structural stability are just too good.

It's good in the sense that any retard can stack lego bricks together and have it work for the most part. you don't need a skilled mason to lay traditional block or a skilled framer.If you're stuck using cheap spic labor, they'll have a higher chance of success with ICF.
Cool idea, but still ultimately cost far more than they're worth for what they are.

It has to be cheap. It has to be cheaper than cheap. It has to be as inexpensive as possible. All other considerations are ignored.They won't make something properly because that would raise costs. It has to be made for the bottom dollar.This means construction workers are underpaid and barely literate. ICF allows the architect to build the house like Lego in CAD software, then all the forms are ordered and shipped and set up by those barely literate workers, saving money.
