My concrete driveway is pretty ancient. Some of the slabs have ~1.25" gaps between them and some cracks that are likely are likely too big for caulk type sealant. Is there any decent options for filling the larger cracks / gaps to stop constantly fighting weeds and help avoid moisture retention to try to milk some more life from it?

1.25" is nothing for a self-leveling sealant. Get some backer rod and try to keep it around .5"-.75 thick. Pro-tip: sprinkle fine sand over the caulk and it well blend really well.
