Each switch has 2 positions. In one position, the motor spins clockwise. In the other it spins counter-clockwise. Anything else?

Here's how it the current flows using the right door switch to unlock the door. Does it make sense? It reminds me a lot of direction switching for DC traction motors except the switches are all thrown pneumatically.

It has 3 mechanical positions and 2 electrical positions. It's a SPDT on-off-on switch.

I'm not an electrician by trade, but I do a lot of work with electronics. I'd argue it has 3 electrical configurations because it is still passes current in the "off" position.

No. It's open circuit. Otherwise your battery would drain overnight.

Your 12V comes in the middle. When you push the switch, it connects the incoming 12V to one of the other wires.

Is it a push button or is it a knob(key)/rocker/multiple buttons? This is how the connections are completed when locked.

With neither pressed, it's open circuit. When one button is pressed, current passes through the other on either the locked or unlocked side to battery negative.
