What can I wear that as lightweight and comfortable as a t-shirt, but more classy? Polos are often too stiff and there's excessive material required for the collar, making it heavy.

Any fits you could recommend? Also what would an elf wear?

Camp shirts or short sleeve button ups. They actually feel cooler than tshirts with some wind because the gaps around the buttons. Most of the camp shirts I own have a larger V than picrel so you get some chest exposed to the air too. Don't think it's very elf-core though.
