Theory of evolution just provides a plausible explanation. Most people aren't adapted to milk. Even in nordic countries, lactose intolerance sits at a rather high 5-10% or so, allergy rates are non-negligible as well. There is a chance one can tolerate milk well, but between the lactose, allergies and hormones, it can be hard to gauge how tolerant you actually are to all these factors. And for what? Some protein and calcium? I won't argue dairy is yummy because it is, but nutritionally speaking, it's a lot of risk for little reward. Milk is quite unique in this.
