Well I live in a normal country with bison farms, so I usually drive out to a farm and buy a butchered bison. They'll give you everything if you ask (and pay). Then you can eat them reasonably fresh, along with the rest of the bison that's in that pill, probably in roughly the same proportion too.

Explain why you would even remotely want that.

I thought about getting a half bison and keep it all in a chest freezer but I realized I only want the patties / ground meat and the prime steaks.

What do you even do with the sub optimal steak cuts if you don't want to make soup or brisket.
