How good are they as a cardio compared to swimming or cycling? What is a respectable number on dumbbells?

farmers should be done with bodyweight per hand for 50-150 feet, not dumbbells for cardio.

It's terrible cardio because it's mostly isometric. You should not do prolonged isometric work as it spikes blood pressure without the heart contractions in and out of concentric work. Better to do walking lunges.
