How should I attack fitness if I have been sedentary with minimal everyday activity for 2 decades (think asmongold) ?
Whenever I try any program or progressions i get injuries even in spots I would have never guessed there is muscle underneath. My joints feel soft like boiled spaghetti.

Then just start with whatever you can already do. Walking, running, basic bodyweight exercises. If your knees explode from something as simple as running, maybe try swimming. Also do a daily mobility routine. Whatever exercise you plan on doing, warm up properly and give yourself a few weeks to ease into it and go through the motions.

At this stage, your job is to just to incorporate going to the gym in to your schedule until it becomes a habit. Just walking into the gym at your level is a feat on it's own. Just go, try a few cardio machines maybe the first day, then try the lifting machines lataer until you feel like you can move on to free weights. Have patience.

Could be problems with your tendons. I have the same problem as a former neckbeard. I just do isometrics and calisthenics staying away from regular lifting until I'm pain free. Stretching can help but it's not guaranteed. Also if you haven't already gotten skinny do that ASAP it will improve so many things about your daily life.

Start slow and work your way up.
Working up a sweat and ypu breathing going up and down some stairs is fine. But there's no need to be coughing up a lung and getting lessions over some intense fast track elite workout routine when you're struggling with the basics and will see improvement with way more easy stimulatiob.
