You can just cook it more and fix it by using a sauce or marinade. But typically after you get your fats you want to top off with leaner meats assuming you actually do get all the fats that are beneficial and not some arbitrary figure.

Been trying thighs lately. Not bad, and I see the appeal over chicken breast. I season and sear them flat about 6 minutes each side. Then take em out, let settle, fry up veggies in the same pan to soak up the fond. Dice chicken (haven't tried cutting into strips like breast and stir fry) then put all together. That on rice or taters had treated me pretty well.
I get meat from Costco super close by and their chicken breast was starting to suck. It'd be tough. Thighs are still in trial run but I'm liking what I'm cooking so far.

For me, chicky titties were what I was most familiar with and they weren't as unsightly as raw chicken thigh. CB is where I learned all the cuts like butterfly, strips against the grain, or simple dicing. Most of that seems to translate to CT, it's still new-ish to me.
Also I think the pinkish color even when fully cooked might through people off. For most people chicken is always white, thighs are not.

It can be hard to get seasonings to stick to CB. Low and slow. When it's done, take off the pan to settle. Then use a little water/apple cider vinegar/worcestershire sauce (if you're feeling slutty), pour onto the fond (the leftover fats, seasoning, seared on parts in the pan), scrape, stir, reduce into a sauce that goes right over the chicken.

Breasts are fine, pressure cook them in seasoned water and they just explode into shreds and become protein mush you shovel down. Here's mine

>1.5tsp lite salt
>1tbsp ghee
>1 cup oats (preferably sprouted, but organic is fine if you don't have tummy issues)
>1 cup soaked quinoa
>250g onion
Sear the chicken and the ghee for 5min if you have an insta pot, what happens is magic. If not, not needed.

>4 gloves garlic, grated
>ass ton of spices of your choice
>1oz lemon juice
Pressure cook on high for 45min
>when done, add 1tbsp ghee or your fave fat here, if death cutting, dont, and add in some high colume low carb condiment like pasta sauce (1/4 or or 1/2 cup is like 60 cal instead of the 100-130cal in a fat serving) or salsa.
Mash with potato masher or wooden pestle or muddler

Makes 4 servings @ 700-760 cal each (depending on what fat you use and if you swap out the last fat add for the lower cal options)
