Let’s say you had a guy that was a great big fatso, but instead of cutting he ate at his current maintenance calories but shifted to eating healthy high protein meals and working out. Would he be able to build a layer of muscle underneath his fat, so that in a year or so he could cut and look absolutely amazing? How would that go?

The stimulus during your first year is so strong your body will even mobilize fat reserves to build muscle if needed.Once you get past year 1 you might need to bulk and cut for optimal results, but for first year for sure you can bulk or cut or maintain or whatever and build lots of muscle.
