Rice is basically pure starch with a little bit of protein. It's literally just a dirt cheap source of calories to pad out your macros and increase satiety without spiking your blood sugar.

What are you talking about, cut them into quarters and boil them in water or stock for 20 minutes. It's actually harder to cook rice properly. Potatoes just suck at being exercise fuel since they release their energy so slowly.
