Realistically what are you missing if you only did Muscle-ups and Clean&Presses? Is this the ultimate workout combo?

Nope, I'm a 70kg skinny fat dyel who practices these movements. They are a gimmick. You don't build muscle with them. Just do weighted pull ups and rows.

Because it's not optimal? Sure, you can build muscle with anything but why would you bother doing muscle ups when you can just simply stick with the basics. You won't be doing front levels with the goal of building abs.

Both of those movements are highly technical so your goal is to power yourself thru those movements with as little effort as possible, which is contrary to bodybuilding where you want to milk the mechanical tension.
But you are also not powerlifting for maximum strength, because you could deadlift much more than you could get up to your chest level or overhead. So you are using mid-level weights at best.
By combining dips and pull ups, you are not able to do as much useful volume as you could by just doing those separately.

I like or at least used to like the idea of minimalist training, but choosing these specific movements is only good if you were training for a competition where you compete in these specific technical movements. Unless the alternative is 0 hours spent exercising.

If you divide these into say 4 movements so deadlift, oph/power press, pull ups and dips. Then you are at least halfway there but you'll find in time you'll have zero arms/forearms, close to zero horizontal press/pull muscles, shrunk quad muscles close to knee etc.
