The simple reason is that wrestling is now the most important part of MMA. The most dominant fighters are mostly wrestlers like the Dagestanis. There are American blacks like Cormier that were elite level hs and college wrestlers and they generally do pretty well. But high level wrestling in the US is dominated by whites. Black kids tend to go into sports football and basketball at a young age. With BJJ, you can reach a level high enough for MMA within a reasonable time-frame. You won't be able to out-grapple Charles Olivera or something but you'll hopefully be able to not get submitted and be able to defend takedowns. With wrestling, it's much more difficult to bridge the gap between an elite guy that has been training for his entire life and someone that started as a striking or grappling specialist or as a MMA generalist (a lot of the younger fighters are now in the latter camp). It's why someone like Chimaev can just ragdoll guys that have very good grappling and who undoubtedly devote a fuckton of time to wrestling as well. There's a sort of dominant pressure and strength that simply can't be acquired without 20 years of training.
