Do those body composition scales where you grab the handles really work? It seems they'd be really useful to track fat loss or muscle growth but I never hear anybody in fitness talk about them.

They work in the sense that they turn on and you can use them. The margin of error is huge. Calipers are a more accurate form of measurement and are cheaper.
