I have a galaxy tab S2 running android 7. I can't stand how large the new tablets have gotten, especially when they tie specific hardware to size

Samsung A7 I got 5 years ago. It was my main manga reader before switching to an e-reader. All I use it for now is occasional browsing and videos so no reason to upgrade to another.

I probably spend 80% of my time on my tablet and 20% on my laptop. Over the years, I have kept buying bigger and bigger tablets. Now I have the 14.6" one shown in the OP. The way I use them has also changed. Back in the Nexus 7 days, tablets really were just big phones, but these 11"+ tablets really make multitasking easy and Android become much better at this over time. I always have 2 or 3 apps open at the same time, except maybe when I'm watching a movie, playing a game, or reading a book/pdf. PC/laptop is still needed if you want to do coding, writing lots of text, using specialized software only available on PCs, or playing heavy PC games. I sometimes run games on my laptop but still stream it over wifi to my tablet.
