Development on mac is surprisingly frustrating from my experience. I'm sure it would be easier if I learned all the quirks but that's the same as with Linux.

It's not that bad on Linux. It's mostly the same situation as mac: if brew/linux package manager installation doesn't have it, then you have to compile from source anyways. I've also had to compile from source on Windows. Often it boils down to developers being lazy and not wanting to compile it for you. Or maybe they're gatekeeping.

Maybe my perception is incorrect but if I recall brew was made by just one guy in an ad hoc sort of way and that same guy couldn't get hired at a big tech company because he couldn't pass a technical interview round. If so then it would make sense as to why they wouldn't want to package his software by default with their systems.
