What you posted does not really qualify as "light mode". Its closer to classic UI.

Light mode did not exist until recently. Light mode embodies modern UI design, which is a vague sea of formless white and off white that lacks any contrast.

Computers were literally operated via white paper with punch-cards or teletype systems, and light mode gui is almost as old as shitty dark monochrome terminals. Dark mode succeeded then because it was cheap.

At work. Usually "white mode" is good in normal light conditions. That is standard, not some "mode".
What you call "dark mode" is something unemployed people using during the night.

I find the in-between: black or white text on *gray* to be easier on the eyes for long sessions at the computer. When I use dark mode and then look away from the screen, I get afterimages. The same thing happens on some overly bright light themes. With a gray background, no afterimages.

Changing the text & background color doesn't cost anything. Dark backgrounds were used because it made no sense (and still doesn't) to have the screen blast your eyes with light from background areas that don't contain any information anyway. Light mode only started becoming popular later on when computers started getting more and more popular with complex document editing and writing, then it became desirable to have WYSIWYG editor programs which replicated the look of the document printed on paper as accurately as possible.

It was popular / standard for a while and then "light mode" started to decline again, because it still fundamentally makes no sense for pure computer UIs. A light-emitting computer screen is not a piece of paper.

Yes, basic terminals were green/amber/white on black, but on computers that could do text attributes, a lot of programs used white, grey or blue as background.
