While I have enjoyed being unemployed and not having a smartphone for the past 9 years, arising circumstances mean I must get one.
I have done some short research, as I have NO experience whatsoever in anything phones, and I believe a Sony phone with SailfishOS.
Beyond this I don't know much, I'd like dnscrypt-proxy and other such programs (probably some phone only ones exist) to maximize
encryption.

If there's anyone that has a phone setup with maximized privacy and encryption (might sound dumb) then spoonfeeding would be much
appreciated. All I really need this for contacts and code scanning pretty much. Thanks.

All phones made in the past 7 years or so have full-disk encryption on by default, and both major OS vendors have had encrypted DNS supported with little user effort required for a similar time period. The rest of your traffic will be happily secured with TLS except what little traffic actually makes up the phone part of the phone; modern networks use UDP. The most private and secure smartphone that will actually work is basically a tie between an iPhone and a Pixel. I wouldn't recommend the Pixel since it has PWM dimming. Just buy an iPhone, you'll never have to worry about how bad the keyboard is if you never owned an Android to compare it to. Otherwise, it sounds like you really want more of a computer in the form factor of a phone, so get a OnePlus or Sony and put LineageOS on it, but be aware a lot of apps won't work. And nowadays any app that won't work will similarly not fully work as a web app, since they've gotten wise. So, basically, buy an iPhone.

First of all, don't, really, smartphones killed the west unironically.
You're gonna have a better experience moving to north korea as a dissident than owning a smartphone, if you go for anything other than explained below you're life is basically over once you're on the control grid.

If you are gonna get a phone yes Sailfish or anything thats not iOS or Android is the best you can do where you're not going to be raped for the rest of your life and get some functionality. I assume you maybe have an old keypad phone or iPod or something similar or at least are familiar with them, Sailfish or like mobile Linux is the modern equivalent, those operating systems are fine to use.

If you must use Android (you don't) get the cheapest used pixel (never give google money) and put graphene on it, its secure but Android is an unusable piece of shit again you really don't want to use it unless you have to, which you don't.

99.9999999% of all modern phone software (Android and iOS) is malware north korea wishes they had the tech to make and never install any proprietary software.
Graphene tries to protect you but retards are gonna retard, if you install anything that anyone tells you unless its fully FOSS and offline congrats, you've got a backdoor all governments and data corporations can spy on you through.
Play services is the most well widespread Android malware that all Android phones are preloaded with (factory OS, this is why you install Graphene which is the only reasonably secure Android based system), it collects absolutely everything you do on the phone and everything you do IRL, if you're actually coming from nothing or something ancient, I don't even know how I would begin to explain how bad it is, you wouldn't understand and be glad for that.

You are among the rare few to remain human, you can stay that way.

TLDR: Get something over 10 years old or Sailfish/Linux. Graphene is the worst you should go for.

I agree with pretty much your whole post. Only thing is that I sadly do require a phone because what I'll be doing needs me to have some "app" to open doors I think, probably with a qr code. This is (as I know so far) the only thing I need the phone for, but this app scares me the most since I'm not entirely sure if there will be a way to run it safely or if it will even work on whatever OS I use, forcing me to get a worse option. If there is a way to create a controlled environment to run stuff like this in then I could breathe easier. Yeah thats what I was wondering from your post I was assuming you're coming from nothing/iPod and that you just need a phone number to fill a job application since if you're considering Sailfish you're probably aware that its not going to have botnet apps.
Do ask if there is absolutely no way you could get an NFC card or whatever to get the doors. If not, depends, you should tell the name if you know it because it can range from complete botnet tier to something thats probably acceptable and could function on the Android emulation layer of Sailfish OS. If thats the only hard requirement you have Sailfish should still be investigated than just going straight to graphene, there are so many buckbroken people who defend android despite it being insanely bad today, yes graphene solves the spying but not all the other just core anti-user design of modern android.

For phone services as you know its inherently insecure and basically public, the only way to avoid that is to not use it, its all very locked down, there are even laws around it which basically kill all motivation for any open source solutions.
The only thing you can really do is always use airplane mode to turn off the radio when unused, the firmware on every modem is proprietary and unchangeable , some carriers even have whitelisting system to block things like old/Linux/etc phones to prevent any possible tampering attempts.
For internet you can use VPN/Tor to protect the traffic, that aside you can't do anything about the backend of the phone network.
WiFi is better if you control that network compared to cellular, if you only need occasional calls/SMS, you can also use a VOIP number than real phone service.

Honestly you're already doing very well, better than 99.9999%, look at all the jealous people here shitting on you. Really happy to at least encounter someone with a brain, its so demoralizing even on here seeing all the drones shill for our horrible dystopia.

My bank never pushed using their app at any point. I still use it though, you never know when some random unexpected charge might hit, and I'd rather be apprised of where I'm at on a regular basis than risk overdrafting because I only get my balance mailed to me monthly.

I checked the website and the only options for download it offers are apple and play store. I think the software is owned by the place I'm going to, which probably diminishes the chance of finding a solution with emulation. As far as physical cards, I heard this specific place issued their last one several years ago, there is an support email but I doubt they would offer any help. You use aurora or a site like apkpure to install things from Play without actually using it, that works for 99% of things, it just depends if the devs choose to have the Play DRM ("Integrity") or try to block custom ROMs. If thats the case the best way to go is Graphene since it can at least isolate googles shit.

There is no such thing as a botnet-free mobile phone. No matter which apps, which OS, GPS tracking is always active. This applies to dumbphones as well. Privacy-wise, the best thing to do is not owning a mobile phone at all.

If you must, the best you can do is installing a FOSS ROM such as LineageOS on a supported phone and using FOSS apps as much as possible. While it won't completely eliminate the botnet, it will greatly reduce it.

If your phone has stock Android, Aurora literally just works. I have never once needed a Google account.

However, Aurora has issues with chink ROMs such as MIUI. Yet another reason to avoid them.
