Nope, windows defender didn't do anything this time, I checked it specifically, and it didn't have any logs about deleted threats like it usually has in such cases. I tried looking it up, and apparently it is an actual comfy issue. For some reason, when you select the 'delay update until next launch' option instead of 'install update now and restart', it can glitch out in a half-completed state, in rare cases ComfyUI will straight up delete its own executable file on program shutdown without installing the update which will hang in limbo in /Local/ files, also leaving you without any access to ComfyUI itself until you reinstall or at the very least redownload Comfy Desktop.exe from somewhere. Also found this on reddit:

note that these are safetensors. swarmui's downloader put them in Models/Stable-Diffusion itself with the other .safetensors. i have the VAE and text encoder in the proper folders. the metadata in swarmui also lists architecture as Anima. i have updated absolutely fucking everything. running the anima workflow from the comfyui backend directly gives the same error.
make it make sense.
