I still don't know why email needs to be any more complicated than IRC or torrents. But for some reason if I want to run my own mail server I'm supposed to run a VM and install some big package like MailCow that sets up a bunch of who knows what stuff for me. Just to send and receive data.

Spam blocklist providers function as extortionists and will just any new email provider to their lists then demand "consulting fees" to be removed. If you're on one of these lists, your emails to your local governments, companies, etc. may get automatically binned as spam.
