CS PhD here. Basically, the company doesn't "build" it like you would build a house, by planning out the design and then assembling it. Instead, it's more like growing a plant from a seed: you have a recipe that dictates what seeds to buy, what sort of fertilizer and sun and water it needs, how long you have to let it grow, but you don't actually need to understand all of plant biology, or even *any* plant biology beyond the absolute basics, to make it grow. You follow the recipe and the seed takes care of the complicated stuff, largely by responding to the environment. This is a very loose analogy though.

With an AI, they just make a big stack of numbers, and run a simple algorithm that pushes enormous quantities of text scraped from the internet through these numbers, over and over again. Eventually, the numbers get good at predicting what comes next when you push through some text. But the real "knowledge" of how the model works is implicit in the huge dataset of text you feed it, just like the knowledge of how to make a tree from dirt, sun, water and air is implicit in the seed you planted.
