except I tried to have it annotate a 17k word document and it pissed its pants, most of me trying to work out with AI is it overcomplicating everything, talking about doing something rather than actually doing it, coming up with bullshit limitations and ends with me realising how much easier it would be to just do it myself.

Recruiters are dumb and lazy, thats why they are recruiters and not in a more honourable position, like being a catamite for nickels.
Just tell your ai to make it look like its not ai.
Even better yet, crawl the linkedin profiles of the people who recently started working there (ask ai to write a script for that), analyse the way they write their profiles there, then ask the ai to write it in a similar style.
It wont be perfect but the assumption that these people who got hired recently write similar on linkedin as they do in their CVs (which got them the job) is solid.
