I took a few programming classes throughout my life, but never stuck with it. How do you go from all the boring highly theoretical stuff about algorithms and math problems to actually making apps and games? I've heard coders say time and time again that they learn on the job and that their degrees helped more with the mindset rather than the concrete details.

You did mention making games, so... gotta start with graphics somewhere. And making a game teaches you a lot about generic programming as well.
OpenGL because it's the good middle ground of "doing things yourself" and yet "not going crazy dealing with hardware".

i think to make apps you need to notice/make up problems and focus on solving them instead of holing yourself in what the best solution is
with 3d graphics you can apply the math you already know to make something nice
i used parametric sphere equations to plot points on a sphere i'll use as a faux starry sky

If you're doing 2D, you can use SDL's built in renderer. If you're doing 3D, why not use Ogre or bgfx?
