I dont think thats possible given current mobile hardware. You would have to store everything before it is written as individually encrypted file structures which would be massive bloat, and probably burn out the security module on every boot or something. Alternatively to use purely application/OS level encryption (no specialized security chips) you need to do all or nothing encryption due to how SSDs work and overwrite security of deleted master keys.

Technically it's because iPhones dont allow apps to control everything that the real tor browser does/needs. Mostly its anti-fingerprinting related stuff and not networking. There is also stopping leaks that iPhone policy makes difficult, though you can pair orbots + the onion browser to get prevent that, which gets you about 80-90% what the real tor browser does. The real downside is you have to exit out of everything though to get orbots to works so its not as simple as just toggle it on then open the browser.
