RDP is a no brainer, it's the best widely used protocol out there in terms of latency and quality. VNC is really shitty.
If you're stuck with VNC, consider x forwarding instead, it's about the same in terms of quality/latency in practice (which is too bad, x forwarding has the potential to be better than RDP, but as usual in linux land: worse ideas, better implementations).

Otherwise you have to use proprietary protocols like parsec.
