The most I found was like 32gb + 1tb and those came with screens so bad it made me want to kill myself staring at it for longer than 5 minutes. They feed us some bullshit about it being faster and more efficient. Maybe that's true but we all know the real reason is to turn laptops into unrepairable e-waste when something goes wrong with it. Sure there are still laptops that you can add and remove ram, but generally those ones are way over $2000, especially with the price of RAM right now. The good news is that laptops are relatively the same performance as they were 5 and even 10 years ago in some cases. Outside of Apple M chips shitting on AMD and Intel, not much has changed. Sure shills will tell you its 500000 gigaflops faster but its incremental. The biggest change is in battery life and I'm guessing at 64gb of ram, whatever you are doing is going to involve a power chord anyway. >tldrbuy a used one

This is caused obviously by the global RAM and component crisis.The solution is used, as others have said. But it doesn't have to be, like, cumstained-used. I found an ebay seller who specialises in reselling display and demo models of laptops, with dozens of configurations of every kind available all in pristine condition, all at prices somewhat comparable to pre-RAM-crisis prices. Look around, you may find something nice on the used market.
