From what I have seen so far, just using the chromium library does 99.99% of the work and most security updates/holes are because of the browser widget, not the underlying program that you maintain.The API is also supposed to be stable so you should just select a new version of libchromium with the bugfix and it should just work.

Because they introduce new features all the time and that impacts the old features too.Because vanilla Chromium does not ship with codecs and support for certain filetypes and they have to be added separately at build time. Because Google might keep adding new tracking features and they need to be disabled to make sure you don't simply create another Chrome build.Or because they might change something in the UI with some library and you have your own UI customisations and features and it takes time to figure out how to include them with the new changes.
