Once I purchase and lay hands on a device, it is my property. Preventing the owner from installing literally anything they choose, while offering no overrides, essentially turns the Commodore Callback into a managed device. I will not spend even 1 cent on a managed device.

Yes it is, and of course they can. There are myriad ways through which they can lock down installation of software via their package manager and their app store, or their parental controls features. They can restrict the ability to launch processes with certain identifiers. They can block outgoing traffic on ports X, Y and Z. They can use a daemon to kill processes with certain names, those that generate certain types of traffic, or those that communicate with particular domains and IP addresses. The possibilities are endless.

This can be done on Android, iOS, Windows, MacOS, Linux, BSD etc... Why do you think it's impossible to restrict the user in such a way on a custom variant of Sailfish with proprietary components?

I don't assume that. I'm going by the fact that they allow sideloading and claim compatibility with 99% of Android apps, think of the millions of Android apps that are basically just a web browser widget.

I'm in poland, but you should be able to find mocor phones easily. HMD has a really nice flavor of it, but I've had phones with it from brands like TCL and Alcatel, and I know the latter does KaiOS too, so it really depends.
Just keep in mind that some mocor phones do not have T9 implemented, which sucks. I recommend just going for HMD if you want a decent experience without gambling. One Alcatel phone also had predictive text that was good, but if you can get your hands on a phone, just try poking around at how texting is like.
Most phones of this kind are 4g and support VoLTE so they're not really obsolete tech, but poorly implemented ones have awful battery life.
