I don't think you understand what draws people to pure math. It's the most anti-STEM of the STEM fields. The challenge is the draw—an clever proof is often more ingeresting than its result. When Grothendieck learned that Deligne had finished the final part of the Weil conjectures, he was more interested in if Deligne used the theory of motives.
The thing with current AI is, while it has been damn good at applying existing theory, it hasn't really developed much of its own theory outta nowhere. Most of the big things they've been able to do involve finding complicated counterexamples. If AI starts managing to prove positive results by developing brand new theories/concepts, that would be the next level.
