Am I misunderstanding something or does hooking this up to a cloud-based AI platform mean that company has 100% access to your machine and all of your data with nothing stopping them from selling/abusing that data?

I know this can be mitigated with local AI but it seems most people who use AI use non-local.

It depends what you mean by "hooking this up to a cloud-based AI platform".
If you mean using some cloused source harness like Claude Code then essentially yes.
If you mean using an open source harness like codex or opencode and you audited the code and compiled it yourself and only give it access to what you want the AI to work on then no, they only have whatever you give the AI access to.
LLMs are text based. There is no binary data uploaded, everything that hits their API is human readable data.

Yes. If you for example "search something" and click a link in Google Search, yes they have everything you did. How people can't still understand simple things like that :D

If you connect your whole computer with access to somebody else's computer, yes, they have full access to your data :D
