I am ignorant and know nothing of how they do it, so this is pure guesswork

Some group runs bots that crawl every single discord server possible and chuck every user's info into a database.

You can have different aliases on different servers but the account info stays the same and AFAIK isn't private.

For your chat messages, the bot simply records the entire discord conversation log, which discord freely hands out with no limit on date.

You would need some programming experience and a bunch of hardware to run bots. It's probably a huge pain in the ass but doable for anyone who's really invested in spying on everyone.
