Just found an SSD and I'm dual-booting windows now. Is there any (custom) version of windows 11 that's not terrible?

Don't bother with Wee11.
If you absolutely "MUST" put a Microslop's collar on your boytoy neck, then grab the W10 IOT LTSC Enterprise Edition 2H21.

Install and set it up while keeping your system offline. Run a crack on it to activate it, then run OOSU10 + enable all the green and yellow settings, and any reds you deem necessary.
Finally, install Open Shell (free variant of Classic Shell) to make the Start menu and file browser less gay (= more akin to Win7).

Boom - you now got an actually performant, stable, offline capable desktop operating system, that does NOT automatically update anything, and still gets security updates up until the year 2032.
Grab shit like dot.NET, VS, and hardware drivers from the internet and run them manually.

....If that sounds too much work, just install something like the Linux Mint, or Bazzite.
