Winblows: 200gb is plenty. Linux I just let it have the whole drive since backups work differently there, but you might want a subvolume for installed games / steam

As for partition size, you'll probably find you'll end up using Linux as your daily driver and will rarely even use windows unless you absolutely have to, so don't give windows a very large partition (or drive).

Windows by itself needs about 50-60GB to run by itself without issues, and linux about 20-30GB depending on the distro. Anything beyond that just depends on the apps you plan to install. You might consider giving both dedicated small root/C: partitions at the beginning of your drive, then manually creating larger partitions for games or data in the remaining free space as needed.Although if you do like to burn money for convenience (and if you were willing to buy a new 2TB drive that's likely), a separate 512GB for whichever OS you use less would save you a lot of headache later on.
