Matrix and XMPP are federated in the sense that it is a decentralized network that is very much like email. You have Matrix/XMPP servers hosted by someone (or by yourself) at some domains, perhaps example1.com, example2.com and example3.com. The users register on one of the servers and get their "handle" which consists of their username on that server + the domain of the server. In XMPP that would look exactly like email address: username@example1.com. In Matrix they use this format: @username:example1.com.
The point is, all these users can talk to each other regardless of what server is anyone registered on, a user from example1 can chat with a user from example2 seamlessly. You can also have multi-user group chats. for example a group chat #our-chat:example3.com containing three users: @username:example1.com, @username:example2.com, @username:example3.com, and they all can talk to each other.
This is what is meant by federation, it's a federated messaging network. XMPP is particularly easy to self-host, it is very light and requires very little RAM or CPU.

Subscription is essentially preloading and you get multiple choices for that, all preloading different content. Your subs fetch the videos before you want to watch them, so you always get cached content instead of a central gigaserver streaming everything in real time. This way you can go offline and still browse hours of content.
