Humans are likely always going to be the weakest link in cryptography. Even though we can break earlier schemes like RC4 or lower bit RSA, it is easier to get the private keys rather than crack them. AES will be safe for the foreseeable future.

The math can also prove that given a plaintext and a key of equal length, iff that key is used only once, the plaintext can be enciphered in a way where it is possible to decipher it into every possible permutation of the plaintext without any indication of the correct one. AES and ChaCha20 are still the top choices.

In general symmetric ciphers are not breakable by quantum computers because of their construction.
It may be possible that AI finds some breakthrough in AES but it has been studied for decades with little to no progress.
