The IoT variant of LTSC is exactly the same but it has five more years of updates compared to LTSC, so there's no real reason for someone to use just base LTSC when it comes to just installing it to their computer at home.
And Rufus gives that warning because it has an old UEFI certificate for secure boot (it IS from 2021 after all) which in the user customization menu you can add the new proper ones directly.

I was basically going to ask this same question, but I'm making the decision right now. Main reason is because motherboard literally does not have any drivers for Wi-Fi unless I switch to Windows 11.

But the reason I have to do it right now is because my OS keeps locking up really, really badly when I do certain things, which I assume has to do with load, but basically, it makes everything inaccessible. I can't CtrlAltDel, I can't open the start menu, I can't open new programs, and even new tabs on my browser won't open. The only thing I can do is force a shutdown. The biggest trigger seems to be using Twitter basically at all, but other triggers could be heavy multitasking, opening a lot of tabs, simply letting the PC go to sleep and then wake up again...
I've already tried reinstalling in place, as in repairing while keeping all the files, and that's not working either, so I guess I just have no choice but to format the entire partition and reinstall and hope for the best. Should I maybe give W11 LTSC a shot while I'm here?

To LTSC is tricky, if you mean Windows 10, the reason you can't do that is because Windows doesn't allow you to "downgrade" 22H2 to 21H2.

However there's a little trick to do an in-place upgrade that iirc it's also documented in the massgrave page, it basically involves changing a registry key and quickly open the LTSC IoT installer

Just try using IoT LTSC 2024 if you want to use 11 at all if you think your current hardware would like it more. It's a good enough start to the 11 LTSC ecosystem but there's a high chance that 2027 will be worth upgrading to right away when it happens.

It's either your boot files or other system files that've somehow gotten corrupted. Get it to load up WinRE via shutting it down 3 times after the Lenovo splash pops up, then when WinRE loads go to troubleshoot -> advanced -> startup repair. If that doesn't fix it then run chkdsk on the C:/ and then sfc /scannow. If that doesn't work, might be time to re-install.
