Generally it would be beneficial.
But it is most useful when the CPU and GPU are on the same package, if not the same die.
In the case of the Xbox360 the CPU and GPU are separate packages, which means that for the CPU to access the memory it has to go over the bus on the motherboard to the GPU, and then the memory controller in the GPU has to access the RAM for it.

Yeah and as all the devs had only made single threaded games up until that point, everyone found it hard as shit to not only multithread, but multithread for those 6 available gimped SPE cores, so most ports just ended up only using the PPE. Sony eventually released a post processing AA library that ran and maxed out a SPE core because there was always at least 1 core doing absolutely nothing, so may as well get some free AA (although it was shit and looked worse than FXAA).

Not entirely true.
The PS2 had two vector coprocessors, one of which was very similar to the SPE in one of the ways you could use it, in that you could upload code and data into it's internal RAM and have it run that program.
So with the PS3 you take that and do it four or five more times. That was the idea at least.

I assume it would have been a GPU somewhat like the PS2 had and you'd have had two or three SPEs calculating the polygon transforms and particles and pushing them to that GPU.
With the frequency bump alone, a single SPE could do several times the number of calculations over the VPU in PS2.
But either they couldn't put together an upgraded GS fast enough, or lacked the ability to build in the features they wanted (shading and lighting shit), so they ended up calling in nVidia.
