Is there any danger in consolidating all my media across multiple hard drives into one, gigantic super hard drive?

that giant hard drive must have a backup and they both must be replaced every 5 years by new ones.

more spinning plates = more chance of failure.

no, same chances, just a higher failed drive count

the chances increase for the same reason flipping more than one coin increases your chance of one of them being tails. like if your chance of a drive dying is say 5% within 5 years using it, the chances of any one of 4 drives dying within 5 years will be greater than 5%.
having a drive in a raid doesn't decrease it's lifespan individually of course so it's generally pretty meaningless to bring it up.

ps. don't gamble, kids.

the key to data preservation is having multiple copies in multiple places and periodically checking them against each other
