I've tried Linux off and on for months and every time it feels intimidating to keep using, guides just have that weird ick to them where it makes me wonder if it'll actually work even if it does...

All you have to do is lose the fear of fucking up, any linux or BSD user has fucked up at some point. It's completely normal but it's better if you learn linux by fucking up using it as a desktop and for personal projects first and then take that knowledge to the workplace so you don't get fired fucking up there.

My tip is to rent a cheap vps and use it to mount a website as a hobby, no cloudflare or anything external; you have to manage everything from firewalls to DDoS. I guarantee you you will learn a lot and lose your fear of fucking up after you get pwned once or twice. If you don't want to pay for a server and domain then host it on tor or i2p at home but I recommend hosting it on clearnet as you're bound to learn more from dealing with all the shit normal webmasters have to deal with on a daily basis.

An operating system is, in principle, just a platform for running software. You use a computer to run end-user software, not to consciously run an OS by itself.
Windows as an OS is basically transparent - it requires no maintenance or modification to just work. Linux is complicated under the guise that it's "customizable", even more so that there isn't a Linux distribution that just works (though in part it's because of the available end-user software for Linux being complicated). Linux very often requires making choices that themselves require some knowledge and/or experience, Windows doesn't.

As an analogy: most people use a car just as a way to get to places. No one wants "modular" cars where you can fast-swap wheels for tracks, or switch between direct drive and drive-by-wire, or whatever else extreme yet unnecessary complication one can come up with. Cars don't even require you knowing how any part of it actually works, you just need to know how to operate it (ie. steer with wheel, accelerate/brake with pedals, change gears with clutch pedal + gear stick).
