LEO sats have pretty low latency. Think about how many kilometers there are between your home and whatever server you're accessing. Starlink bird are around 550km/340 miles up. Even for a round trip, that's not much.
The real issue is bandwidth. In the middle of the rain forest where you have the entire satellite to yourself, the main limitation is the transceiver's ability to use a wide band of frequency. Once other people and devices are nearby, that all gets divided up and very rapidly shrinks the amount of bandwidth per use. Even an exurb ends up having limited speed due to sharing capacity. With fiber, congestion is possible, especially if bad topology is used, but that takes far more users and devices to be significant. That's what Starlink cannot compete against.
