Signing an NDA does not "hide" your employment and no employer will ever require from you to hide the fact you've worked for them. I don't think it's even legal. An NDA obligates you simply not to disclose the specifics of what you did there. People who work at literal NSA black projects still normally list their employment at a company contracted to do it.
