Civilians *were* targeted but the result of most wars was a change in management, not a radical demographic overhaul for the sake of deliberately destroying an ethnic group. Ancient genocides did exist, like the Jié in 16 Kingdoms China, the Romans in Pontus or the Sikhs in 1762, but they were not the rule. However, targeting civilians isn't the same as genocide. "Kill everyone in sight until the prince surrenders" is not the "deliberate destruction of an ethnic, national or religious group".
Pannonian Avars from area in and around present day Hungary and Northern Balkans were completely erased as an ethnicity by centuries of wars with Germans, Slavs and Byzantium.
