Europe had wheat, East Asia had rice. Which was better for forming a gigantic civilization?

In first order, rice has higher yields and allows higher populations in a given area. It also requires more work though, so the share of people available to do other things is lower.
Then we get into speculative cultural genetic effects of rice vs wheat farming. Wheat farmers are supposedly more independent, while rice farmers are more obedient and diligent. As for which one is better in the long run, that's too early to tell.

Rice is great if you live somewhere with way more water than people need. Otherwise wheat is the way to go.

Almost always wheat and rye were soaked for porridges and it was not possible to make bread without fermentation historically. They didn't know what yeast was.

Even if you make unleavened bread in a hurry like flatbreads, you're going to get clear signs of malnutrition if that becomes a staple for each meal. The electrolyte and zinc depletion will render you worthless.

Acording to whataltifhist: wheats better, because rice growing cultures typically are weak and passive due to constant disease and lethargy. If a rice growing region forms an empire, its because its warrior/elite class is centered around a wheat farmer or mountain herder area.

It's a quality vs quantity choice. Wheat is more nutritious, especially when it comes to protein. So wheat eaters are healthier and more robust. But rice has higher yields supporting larger populations.
Both clearly have their merits. But I'd personally lean towards wheat.
