Even if you make unleavened bread in a hurry like flatbreads, you're going to get clear signs of malnutrition if that becomes a staple for each meal. >>18503524It's a quality vs quantity choice. Wheat is more nutritious, especially when it comes to protein. So wheat eaters are healthier and more robust. But rice has higher yields supporting larger populations. Both clearly have their merits. But I'd personally lean towards wheat.
