The brutality of the first five crusades mostly boils down to the colossal amount of disorganized peoples wandering without supply or support that drove the crusaders to both attack other christians and literally cannibalize the muslims. Otherwise the christian kingdoms did not have any technological or tactical advantage, wich, as the enthusiasm waned, resulted in the obvious inviability of the crusader states
