I’d imagine if they’d remain independent, they’d have a more decentralised government like Indonesia or India. They’ll create a synthetic Mayan Language that all Mayans understand like Standard Arabic or China’s attempt at a central language. Aspects of its culture, language script, religion, etc depend on when you’d want this change to take place. They’ll probably centralise their religion if they did not become a colony, like Japan or Thailand since their priestly class was quite powerful socially.
