It wasn't much of a war though, maybe for Texas but for California the local government basically just fled south because they didn't have the ability to properly administer the territory and Rancho owners basically wanted to be Americans because they felt like the US was in a better position to maintain their respective land grants and wealth.

Two examples: tobacco and land ownership.

Even though the Mexican climate is perfect for growing tobacco, Mexicans were forbidden to grow tobacco. Anything that could make a profit, firstly, had to be grown in Spain before being sold in Mexico. By the 1800s, 90% of land ownership in Mexico was owned by 5 different families + the church.

Contrast this to the American colonies: gentlemen farmers were free to grow and sell tobacco; middle class laborers were free to buy land. So much that by the 1800s, gentlemen farmers had more wealth and land than the British aristocracy.
