because its a christian manuscript made by the anglo saxons, who probably had a different version of their Woden to the norse Odin. we know the anglo saxons had myths that are missing or absent from the norse mythos, like the 9 herbs myth, so its not that out of question that their version of odin wasnt missing an eye either. or even more likely, that the christians who made the drawing didnt entirely understand it
