It would be very unlikely that any of them could count higher than 10. Most probably not even that high. None of them knew how to read or write; uneducated peasant cultists.

I mean presumably Paul was just told this by someone since he wasn't actually there. None of the 500 are named, none of them wrote anything down, and there is no reason to believe this event actually happened. Even if they could count people are famously bad at counting large numbers of people and are inclined to exaggerate. I don't know if we know how many followers Jesus actually had around the time of his death, Acts says around 120 but Acts also says Peter converted 3000 people in one day and could use D&D Power Word Kill so I'm sort of skeptical anything the author of Luke-Acts has to say.
