Why did Europeans borrow money from Jews, who would charge them interest, instead of borrowing from their fellow Chrisitians, who would only expect back the exact amount they lent?
because lending money without charging interest is a losing game so no one does it professionally

It's only the Jew who thinks that borrowing money magically conjures stuff into existence. It doesn't work for the same reasons why printing money doesn't work. (it's in fact even worse in a way, as you are left with debt when there is nothing that could be produced and sold anymore.)
