If a person acts a certain way when it would genuinely cost them - some reputation, some comfort, some amusement, some pleasure - if they more often than not react to these costs in a certain way, that certain way is part of their character. But you have to remember that people are complex. There's layers to the human mind. (Which is why we can lie to ourselves - something inconceivable if human minds were a single layer where the liar and the lied-to were the same). One of those layers is your physiological wiring. Some people are physiologically wired to shut down their empathy when their blood sugar gets beneath a certain point. Some are wired to be explosive when not having enough sleep. That doesn't mean they get a pass to go around spitting in people's faces, but just keep in mind that not all datapoints are the same. The character is how they consistently choose to act and if their physiology makes certain choices incredibly difficult, you should leave some margin of error for that.

Alcohol has lots of effects - loss of balance, slurred speech, unclear vision. But for example sleeping with your best friend's wife isn't a clinically replicated effect. That's something you chose. Most of us have had moments of anger where we've said or done things we deeply regretted upon cooling down, because anger doesn't show our true personality but rather brings out the worst of our personality, unless one wants to reason that our anger is our truest nature with all of our joys, sorrows, and other emotional states being nothing but insincere masks, which again I believe is nonsensical.
